I've hated on this show a lot but this was actually a pretty satisfying episode.
A lot of it was weird bullshit but they advanced the plot and explained enough of the dumbass mysteries that you can be slightly satisfied.

For the purpose, my thinking is that the Eagans believe they have some benevolent purpose to spare people from pain and discomfort (I think the Kier animatronic alluded to that). Gemma's rooms were all things that people dread having to do: the dentist, flying, and even just mundane annoyances like writing thank you notes and exercising. I think the Eagans believe that the Severance program can alleviate these ills for people so they can enjoy their lives. But of course the flip side of that is that there are consciousnesses of yours that ONLY ever experience those things, which is a nightmare for those consciousnesses. The innies are there to exemplify that. There was a Gemma that ONLY ever existed in the dentist chair, which is a horrifying thought.
As far as the innies go, I think there's a lot of presumption that Lumon proper knows what's going on down there, but I really don't think they do. I think it was a very tight-knit group that was aware of what was really happening on the severed floors. Drummond is gone. Helena is down there as Helly. Jame Eagan is a weirdo who seems like he won't be able to do much. Milchick is about to get tied to a chair or locked in a room somewhere (meaning they'll have his badge as well as Drummond's). The only two question marks are Dr Mauer and the nurse downstairs. But with keycard freedom, they can really explore the severed floors, experiment with the other chip programs (we've only seen the overtime contingency and the Glasgow block, but there were many others like beehive (probably turns them into drones that follow commands) and lullaby (probably puts them in a stasis)), etc. Plus now that Gemma is out (again, assuming the rest of Lumon was unaware of what was going on, she should be free to leave with Devon and Harmony waiting for her), they can have more going on on the outside as well. It may end up even being a hostage-negotiation type situation as they try to convince the innies to come out.

SPOILER:
That wasn’t Helly at the end, that was Helena. The evil grin gave it away. Things went south and that was Lumon’s Hail Mary. Helly was all for Mark’s plan earlier in the episode when innie Mark was hesitant.
