Back when I was a kid all I had was games and time so I was able to beat even the hardest games
The one I remember being very hard to beat and very fun and very satisfying was this looney tunes game on the snes. There was enough variance to be fun each play through. To beat the game you had to do it all in one go, no save spots or codes.
And things were predictable enough to be rewarding. It was also hard enough to stay challenging.

Also the controls and mechanics were good too very responsive and if you mastered them you could do a lot. lots of hidden rewards too

I feel like Zelda 2 was mostly difficult because the Internet didn't exist yet and the latter part of the game was never covered in Nintendo Power. A lot of the end-game content would have been easy (or at least much easier) with YouTube or other walkthroughs.
I remember as a kid being stuck on the final boss for weeks (if not months) and had given up because I thought it was impossible to beat. I remember venting about it to a kid on my Little League team. He said, "The final boss is easy. Just go to the far left side of the screen, duck, and slash your sword repeatedly. Shadow will keep running into your sword and get shredded." Once he told me that, the final boss was a cakewalk, but I probably never would have figured that out on my own. Today, I'd just look up the boss fight on YouTube and would have beaten him in three minutes.

I guess I could add that I beat Hades at 32 heat to unlock the final statue. That is in addition to unlocking the bonus ending where the Olympian gods visit the Underworld. I also became an Unseen One, but that requires more grinding than skill. It's one of my all-time favorite games. It's basically endlessly replayable because the differing boons force a different strategy on every playthrough.

i have done all the major GTA Online heists with randoms. that means random players selected by the game's awful matchmaking system. i had to actually learn how to play well so that i could successfully carry a bunch of incompetent randoms through the missions. this video is typical of doing GTAO heists with randoms:

Never was able to beat punch out or ghosts and goblins or super ghouls and ghosts. I got annoyed and gave up on dark souls 2 also. Never beat the original castlevania either despite loving that game

I beat the original Ninja Gaiden on NES, which frequently shows up on "hardest NES games" lists, although I actually didn't think it was that bad. More recently, I beat the main content of Celeste with 100% strawberry collection. I still haven't beaten the fucking bonus level, though. Seriously fuck that level.

Let me tell you, the bullshit in the main game is indeed frustratingly hard, but it is absolutely nothing compared to the insanity in the B sides and the bonus levels. I sometimes die hundreds of times just to clear a single screen.

Every “hard” game I end up beating, it just feels like I debunked the idea that it was hard to begin with. But some games are Impossible imo and you’re gatekept by your reaction speed
Every mega man game — nbd. Castlevania 1. They’re not that bad.
Goldeneye on 00 Agent — control and Aztec in particular — jfc. Never beat those 2 levels iirc. Probably 100 attempts or something between them. The difficulty of western-developed games is often underrated. Sega Genesis has badass games no Loser remembers that are hard af. Jap games like Contra are well-balanced by comparison.

It's not the video game itself, but the Baldur's Gate 2 community had a "solo insane poverty" challenge back in the day. That is, you couldn't pick up any party members, you had to play on insane difficulty, and you couldn't use any non-plot items (e.g., you can't have a weapon or armor but you can use a required key to get out of a dungeon). It was only possible to win that way as a sorcerer and it was extremely challenging. When I finally cracked it, I was in nerd heaven.

Berserker Khazan is up there. It's the hardest Souls type game by far. Makes Elden Ring, Lies Of P, Bloodborne, etc look like Jokes. People are saying it's comparable to the hardest unlockable post-game Ninja Gaiden difficulties.
I did normal mode, no summons, true ending, which is basically top 1% of players. Usually I'm not that good, but I ascended for this game.
