I enjoy the greens and they're much firmer (very good in a twist on a Greek avgolemono style soup imo) but I enjoy the texture of the indian/persian/etc daal styled lentil soups as well. It's silty and pleasant and with the right spices and some broth great for a chilly evening or a flu

They just look atrocious in a bowl. There's no way around it. Some garnishes can help but unless you puree them you're getting some kind of excreta looking yellowy thing on your dinner table
