Yacht Rock is a latter day neologism that is essentially meaningless but soft rock is a contemporary term that did describe bands that were softer, per se, than hard rock. If you had Zeppelin, Sabbath, Hendrix, and AC/DC records and all of a sudden you heard DS and Steely Dan you would immediately remark that it has a softer, less edgy sound. Soft rock bands are also synonymous with and/or overlap substantially with muzak, elevator music, and bossa nova. Being chill, stylistically inoffensive, and blending into the background vs e.g. Immigrant Song or Voodoo Chile which punches you in the face. It's not debatable regardless of the terminology.
That being said, describing and classifying its sonic characteristic is different than whether or not it is good. In many ways if we accept the artistic intent of the soft rockers we can then analyze how well they accomplished their own mission. To that end Steely Dan mogs DS by a wide margin. DS is cosmically overrated as the traditional 'go-do' my middle aged lawyer dad just bought a strat and decided to noodle around to Sultans of Swing master men. You can put them in the same bucket as Rush and so forth. A corny middle aged dad band. And hey within that perspective DS IS pretty good. I mean, they were alright. If you like it, you like it. My main criticism of DS is that I think Knopfler is melodically weak. He is about a 5/10 songwriter. But a chill bro for chill doodikoffian jam seshes.

Watch the HBO doc, they actually do a great job with the genre definition and policing. It’s geneology is very specific to the group of musicians who were super accomplished session players that were pretty deliberate trying to fold in jazz influences they had and were commenting directly on each other and themselves/their moment is a very conscious and self-referential way with Steely Dan being the Elvis moment that consolidated and supercharged their efforts. Dire Straits were not at all that and were pretty clearly derived from other shit that developed in the UK around the same time, but they definitely tried to draft off/gesture toward yacht rock, likely because it was such an easy way to get record execs to respond and pay attention.

they had a tour with saxon last year in support of their new album which apparently did pretty well. they have always been a working band. not a lot of primadonna shit; they mostly just do shows and grind out one album after another for their core audience.

there are some good bands that were big in canada but never crossed over that much into the US, like chilliwack or april wine. or cold chisel for australia.
some bands had good stuff before churning out bloated radio slop, like the scorpions. the entire first decade of their career is mostly forgotten aside from that one particular album cover. or robert palmer. or rod stewart.
part of the issue is that most classic rock bands are near-completely forgotten at this point. the genre got funneled into 'classic rock radio,' which ended up pruning away almost everything which didn't fit a handful of narrow algorithms.
there were all kinds of regional or middling (peaking around spots 30-60 on the Billboard 100 chart, for example) hits that vanished over time. eg, the marc tanner band had a few such songs, and some of them are good, but you'll never hear them unless you look them up yourself:

or an act like john cafferty and the beaver brown band, which had one gigantic radio hit (on the dark side) while the entire remainder of their long career is basically unknown.

Allman Brothers, Cheap Trick, and ELO are all good choices. They all had long runs of numerous high quality albums and hit singles but aren't usually rated among the "greats" like Zeppelin, CCR, Stones.
A lot of the other bands listed above are one-hit or one-album wonders, which is different than being underrated.
