1. It's the legally correct result under the Major Questions Doctrine, which wasn't in existence for the vast majority of the IEEPA's (statute Trump relied on) existence.
2. Justices like being seen as the saviors of the global economy and trade system, which they will be if they do the needful.
3. I'm sure the SCOTUS justices own stock themselves and would like to see them moon.

Some things are more amenable to judicial review than others. A ruling stopping an airplane flying Venezuelans to El Salvador is, logistically speaking, much easier for the executive to ignore than a ruling on tariffs. Tariffs involve government officials going to importing US companies and saying "you owe us X dollars." After SCOTUS rules, those companies will rightly be able to say "I don't owe you shit- SCOTUS struck down that tariff." What's Trump gonna do- enforce the tariff in a court which WILL follow SCOTUS rulings?

First of all, customs officials aren't SEAL Team 6 who love Trump and would die for him. They are bureaucrats who probably hate Trump and loathe this huge increase in their workload resulting from tariffs.
Second, courts can and will order customs officials not to enforce the tariffs which have been struck down, and they can jail them for contempt if they disobey. And if Trump fires them for following court orders then those courts can and will order them to be reinstated.
When it comes to the executive disobeying court orders, there are certain situations where the executive has the upper hand and certain ones where the courts do. This tariff situation is emphatically in the latter category.

Two more direct reasons:
The IEEPA doesn't authorize tariffs.
The IEEPA applies to "unusual and extraordinary threats." The position that the president can use it based on trade imbalances with every country, and some uninhabitabed islands, is a huge stretch.
The 3 democrat appointed judges and Roberts will absolutely rule against Trump here. At least one, and probably more, of the other 5 will too.
