I'm only a little taller than you, and 190 vs. 200 is a matter of preference (back in college, I could get up to 215 with muscle, but those days are gone), but below 190 I'm losing attractiveness by the pound.

unless you have the muscularity of a college cornerback or better, or you have the natural build of someone like jon hamm and do enough core work to keep your abdomen completely flat (100% you don't), you look dumpy at 6'1/190+, especially over the ago of 30. women do not see you as chadly merely because you are carrying extra weight and you think you're strong because you only look at your torso in the bathroom mirror while sucking in your IPA gut and rolling your shoulders back.

i did something similar around 30 when i noticed i wasn't looking as fit no matter what kind of condition i was in, zero regrets.
i went from 195 strong-fat at the same height down to about 165, then slowly built back another 10-15 lbs. of muscle while staying as lean as possible. now i look way better in my late 30s than when i was in my late 20s. being lean with good visible musculature is exceedingly rare at this age, really sets you apart. most people over 40 are fucking themselves up on wegovy just to get the spare tire off -- keeping your body weight and body fat % low is the fountain of youth and maintains your looks.

I have a 29" waist at 6'0", safely below 10% BF, a legit 6-pack (including great definition for all other core muscles) and am the same weight I was playing high school football (~183) with lower BF% than I had then.
The secret is 20+ years of perfect diet, daily exercise and an autistic (and joyful) obsession with health, strength & fitness.
