In my opinion its only legit function is to see if the bottle has been corked (i.e. the wine has gone bad because of a defective cork, this happens to maybe 1 in 100 bottles with old style wooden corks). Corked wine is spoiled and can't be drunk. But you can smell corked wine in a half second of putting the wine near your nose, it smells like vinegar, you don't actually need to make a song and dance out of tasting it. Anybody who does that is just being performative because they think it is expected of them or to "impress" some date with their faux sophistication or similar.

I don't think it is legit to say "no it's not spoiled but I just don't like it please take it back" and expect not to be billed for it.

in olden days, wine was produced in small batches, by families or dedicated vinters. There was no quality control, no hi tech sanitation, and each bottle was made with love. Sometimes bottles of wine weren't sealed properly and would go off. tasting it ensured you were paying for a well made bottle that had been properly stored, cork down, so no air infiltrated. Today, you are sampling wine from a box that was made in a silo the size of a city bus.

when I worked for a LOLFIRM the jew partners took us to some holiday lunch. MainJew ordered a few bottles, some of them were not consumed by the table, and he very shrilly called the waiter over to ask that the opened, undrank bottles be taken off the bill.

Waiter demurred, but MainJew insisted on a manager. Finally, the manager said they would use the opened bottles as "house" behind the bar, and so would only charge us a nominal fee. MainJew was irate that he had to pay anything because they were going to resell the stuff.

i really think jewish kids grow up seeing their parents absolutely jew restaurants out of profit and its all perfectly normal for them. They do this at hotels, too.
