Say you go to a random airport, and get to survey everyone and for those who say they can play chess, what percent of them actually know any openings?
Btw, I play a slight variation of the london system if white, and caro kann or kings indian, depending on how white opens if I'm black

The reality is that opening theory is not the deciding factor in the vast majority of chess games and is boring as fuck to study. Tactical errors dominate low level play and are much more damaging than the sort of minor errors someone who only casually studies opening theory will make.
