first off, chicken is the one thing you NEVER get at a restaurant. you can make that shit at home.

fish, other than salmon or tuna, you SHOULD get at a restaurant. it's hard to cook right, so if the chef is good let him to do the work. the restaurant may have sourcing to get fish you can't get at your local Grocer or CostCo's so absolutely sample whatever they can get thru Sysco or whatever.
