I think the idea is that just being angry isn't a good enough reason to kill somebody. When the Jedi kill, they're supposed to be acting in a "just war" or "self defense" context. Dark Side bros kill because they're pissed off or for selfish reasons. Anakin shouldn't have killed Dooku because he was defenseless (I think his hands had both literally been sliced off) and posed no immediate threat. Anakin shouldn't have killed the CHILDREN among the sand people because, while they may grow up to be future Hamas fighters, you can't just genocide children. Luke seemed to take it a step farther in Return of the Jedi, when he determined that to kill his father would have been against the Jedi way no matter what, and he showed the Emperor that he was willing to die to abide by the Jedi Code by tossing aside his lightsaber. (I never understood why Luke didn't try to take a swing at the Emperor instead of tossing away his lightsaber - maybe he sensed with the Force that he was simply not capable of defeating the Emperor and calculated that the only way forward was to give his father an opening to strike).
