This ribeye burger was hand-ground from a USDA Choice ribeye steak that was on sale at Kroger, my local provisioner. I ground the beef approximately one hour before cooking it on my grill.

The beef was then seasoned with toasted & freshly ground coriander seeds & black peppercorns. I also seasoned with pureed red onion & garlic--I made that paste earlier yesterday with an immersion blender after finely chopping the onion.

The burger features locally-sourced brioche buns, homemade pickles from home-grown cucumber, home-grown heirloom tomatoes, bacon, lettuce, american cheese, homemade barbecue sauce from home-grown heirloom tomatoes, homemade basil-garlic aioli from home-grown basil, and homemade onion straws that I first marinated in cajun-seasoned buttermilk.

The corn is nothing special: Grilled (wrapped in foil) and served with butter & maldon salt.

The patatas bravas are made from peeled yukon golds that I first cooked in oil at 240 degF and then finished at 355 degF. They're seasoned with lawry's and topped with the same basil-garlic aioli on the burger.

kitchen aid mixers are largely shit nowadays. I've gone through two, but I also put them through hell. My first one got destroyed-- the inside gear broke. I replaced it twice before tossing that mixer and getting another. I now have a "professional" kitchen aid that's a little better, but still not great, for kneading bread dough. I still won't grind meat with it, though... the hand grinder is fine for that. I can get through an entire ribeye inside of 30 min. One steak takes about a minute.

way off. I also added a few drops of sesame oil to the beef as well. It wasn't perceptible, but added a deeper complexity to the beef. Same thing with the coriander, red onion, and garlic. You can't taste those individual flavors, but they add some complexity to the beef that you can definitely notice.

Thank you. It wasn't even that much work, because I always make my sauces over the weekend. All I had to do was toast the bun, grind the beef, make bacon, make the burger seasoning, fry the onions, fry the potatoes, and grill the burgers. All-in it was under an hour from start to finish. The sauces add a couple more hours, but that's shared across multiple meals.
