going for a month on a work assignment. want a neighborhood that's walkable, near good bars (but not night clubs), cafes, etc. something like Da'an in Taipei, French Concession in Shanghai, or BGC in Manila. price is no issue - i'm not poor like nyuug.

Hongdae is centrally located, home to several universities, and has lots of interesting little bars, restaurants, shops, streets, etc. Sounds like what you're looking for. It's a nice place to stay.

itaewon is going to be the least korean part of korea if that's your main concern.

Itaewon is interesting and worth a visit if you're there for a month. It caters to the adjacent US military bases. I wouldn't pick it as my home for the month.

Sorry, there are no good places to live in Seoul. But like most destinations in third world countries, at least it's cheap. The local girls also hate that they're stuck with korean """men""" so you should have no trouble picking up a temporary girlfriend. Only pitfall is that they can become too attached; go on two dates with a Korean girl and she's imagining herself in a wedding dress and with a fiancée visa in her pocket.
