because their alphabet looks like little cartoon characters, and each writer developed their own style, so that you could tell who wrote what just be looking at the way the characters were drawn. This also gave the language another dimension, because an author's artistic choices often reflected something about the point he was trying to make.
Because of this, we are able to track debates between various Mayan authors. We can see what viewpoints were being expressed using various artistic styles and sort the authors accordingly, without knowing who the authors were or even their names.

they were conquistadors, not historians.
at the time egyptian artifacts were just sitting around and people didn't become interested in collecting them for hundreds of years later. the concept of preserving ancient civilizations was not widespread, and certainly not something they would have invested in across the ocean. and it's not like it was necessary to do any recon nor did they care to: they wanted to enslave and conquer, not learn about quetzalcoatl.
it's tragic but not at all surprising.
