If I was going to grate it fresh? I think I'd probably mix it into the composition of the ground as opposed to spreading it on the bun. The direct access to the fat + diffusing the pungency of the flavonoids via liquid redistribution would probably make for an interesting item

I feel that

Two exceptions to this: hand mortared peppercorns and thinly cubed mushrooms (usually portobello caps but baby bellas are good too). The mushroom as a subordinate flavor is quite nice and adds both taste and texture to the burger without any losses or conflicting flavors/textures

This was not fresh grated either, this was a jar of Gold's White that I've had unsealed in my fridge for a while so it wasn't anywhere near what it could've been. Had that, a sauteed yellow onion, and some extremely coarse ground mustard. Not a bad snack before bed although I'm sure I will pay the price when the sleep paralysis shadow hunny comes by to sit on my chest and I have to murmur not now baby I'm wide awake
