Profit margins are so thin there is little margin for error and owners typically can’t afford a real chef’s salary so they hire a chef to design the menu and fire him as soon as the sous chef learns how to cook everything and then they promote the sous chef to head chef.

Date: July 2nd, 2024 8:47 AM Author: party at the party playin wit his nose now i did a little bit of labor work for one of the top restaurant groups in DC last summer. the owner was a MASSIVE douchebag and i suspect was a coke addict because he'd email us with "bright" ideas at 3-4 am.
part of what i did was interviewing his managers to determine whether the place was at risk of being unionized, and i learned during the course of that that the place was not profitable and on the verge of going under. i think two of the places have michelin stars too. restaurant business seems like it blows. |
