Indians never grew sweet corn as a staple. They considered it an oddity that was only used on ceremonial occasions to make sweets. They ate hundreds of varieties of maize and only a few were sweet corn.

The problem is that by the time Europeans arrived here, they were already hooked on sugar from Asia. They kept asking these American Indians "what's good to eat around here" and Indians kept giving them all this maize, but it never worked. The Europeans never said "oh thank you, this is great" until some tribe noticed their sugar addiction and offered them some sweet corn. It was at that point that Europeans finally came to love maize, and now it's ILLEGAL to use other varieties of maize for anything but animal feed and home decor

Corn is so basic to bourbon, it’s a federal law: In order to be called bourbon, at least 51% of the grain used to make it must be corn. (Other grains such as barley, rye, and wheat all come in second.)

America has a thing for corn, going back to the first Thanksgiving in 1621, a meal the Pilgrims organized specifically to celebrate their first successful corn harvest. That’s how big a deal corn was.
