WTF is this question about??? You should demand that you keep your seniority as a condition of starting at your firm; otherwise, you will look elsewhere.
I'm assuming from the premise of your question that you do not plan to stay in Biglaw long-term. The average person stays for 3-4 years, so you'd be cutting out as very valuable 5-6 year associate rather than a less valuable 3-4 year.
