In large part I agree with you. Especially in SF, the overwhelming are mediocre and over priced. I truly enjoy restaurants more when I'm traveling and eating at a place that might have one or two items on a chalkboard as what they're serving that day to the locals. More and more I find 'fine dining' as total flame and as my cooking skills evolve I realize I can cook the majority of it myself with not too much effort (plus, I find it fun).

No, it's more that when I'm traveling I have a genuine need to eat at a restaurant. I see that as the classic purpose for it, and thus I don't mind going to one. I'd prefer to go to a reputable "mom and pop" that has a simplified menu because it's more realistic to get a quality dish that way versus the euro version of a Cheesecake factory w/ the Sysco catalog as a menu.

There are definitely too many restaurants with owners either being corporate groups or individuals trying to get rich off of it (lol @ that idea).

You still, on occasion, can find places that are husband and wife / legit 'family' restaurants where their focus is just to make an honest living. That just happens to be more common overseas because the social welfare/healthcare system tends to foster small operations like that.

The burger thing is what kills me. I can buy a single brioche bun at Whole Foods, ask the butcher for 1/2 pound of 20% fat ground beef, and fucking do a "gourmet" burger perfect for under $5 / 20 min. You want 3 layers of super thin patties, I can do that as well, just watched how the grill dude did it at Steak and Shake and I became 180 with that technique. Some stuff is just too brain dead simple to pay for, burgers are one of them.
