than mfh. pddj and i were talking about this over the weekend. and about how, for example, in a 2nd/3rd tier city, you can see a play at the quaint local playhouse for cheap and w/o faggy pretentiousness of some competitive ticket process. mfh everything is faggy, snobby, competitive, expensive, etc.

and how any kind of cultural/food festival in mfh is totally hijacked by GC sponsors. how all the farmers' markets are fraudlies GC, etc.

yeah, you're basically describing what happens to the tippy top of anything.

take sports for example. you can go watch the US Open and it will be expensive and your seats on Ashe will be shitty, and there will be people sipping champagne and just there for the experience.

OTOH, you can probably go to a challenger tournament and watch a match between players ranked in the top 200 in the world and se very high level, quality competition for next to nothing, in seats right on the action, and i'd bet you could probably get access to the players and shit too.

as an example, i like symphonic music. rather than spend the money and deal with the bullshit of the NY Philharmonic, lots of times i will go see like the Yale or Columbia orchestra, or there are lots of nice local symphonies outside the city that provide great entertainment for a fraction of the cost and hassle.

Why? There are obviously amazing restaurants in NYC, some of the best in the world, but there is a lot of shit out there - most of it, especially in MFH. Brooklyn and Queens have some interesting places that are new and exciting but they too are pretty dull compared to other exciting new, fresh food scenes.

Something that hasn't been done before. Perhaps a cuisine that is evolving. Charleston is a great example of this with the reintroduction of gullah-geechee recipes from Africa which the slaves brought over with them. You're not having salmon or tuna - you're eating the world's best triggerfish freshly caught that morning. In NYC you have, in some sense, the best of everything but perhaps at the expense of the next best thing.

i dont know much about the south, but i do think a positive of GC/globalization is that there's more information sharing about how to do a "haute cuisine" restaurant properly. it's easier than ever before for a 3rd tier city chef to figure out how to replicate a mfh restaurant.

the rental costs have really wreaked havoc on the city. not only does it favor national chains, but it also puts so much pressure on businesses that it creates tons of turnover, so you end up losing the concept of local joints that have been around forever and give a place it's character. think a Barney Greengrass type place for example -- much harder for those types of places to survive today.
