Win10 is alright but some games still work better on win7, I'd throw in a 500gb hdd to dual boot it from

My Logitech G700 has held up for years now, and I drop it onto the floor weekly. Has 4 side buttons and 3 next to the LMB, fully customizable, use all of them constantly.

As far as keyboards it depends on what you want - if you need lots of hotkeys steelseries has a few good mechanical ones (but I'm using a razer black widow I got as a gift years ago and it works fine for my purposes). Just research what kind of switch you want (quiet, springy, low resistance etc). If you can, get one with a PS2 connector (the old green and purple one), it can register all keys pressed at once. USB only allows like 5.

For a $3k setup, I would double your RAM and upgrade to at least a platinum power supply. 500gb SSD can also fill up fast with modern 80-120GB releases, but if you don’t keep a large library installed it’s not an issue.

RAM is relatively cheap and rising in price. 16GB has been the standard for high end gaming for well over a year. A system like this will last a while so may as well futureproof RAM now.

Putting games on a HDD is a terrible idea. The entire point of an SSD is fast load times.
