it's a valid point, and the choice depends on your personal preference. i would go with a potentially overcooked lamb that comes with decent seasoning and sides over a guaranteed bland fish.

Chilean sea bass (toothfish) stays moist and tender when overcooked better than any other fish, so it is a good choice for airlines and banquet type meals. It is also not environmentally friendly, which would probably make you enjoy it even more
