I don't mean literally carving the wood or anything but buying a body, electronics and neck separately and either assembling it or taking it to a guitar tech to set up?
I really love the features of the Fender American Elite P Bass. Both P and J pickups plus active/passive switch. Perfect bass for a cover band bass player who only wants to have 1 bass.
I'm not crazy about the neck. It's not as chunky as a classic P bass but I prefer thinner. It seems like the body can be purchased new for around $700 and a new jazz bass neck for around $300. The bass as is retails for $2,000 so I could potentially get my preferred version of it at half the price.
Anything I should be wary of? Pitfalls? Anything I need to do to ensure the neck will fit?

A little bit. I almost bought a new body for a guitar so I had to look into this a lot.
Obviously with a body and a neck you want to make sure that the heel of th neck is the right size. Meaning both width and depth. Lots of them are different. Then there might be considerations of how high the bridge and action are compared to the body, etc. but normally if the neck heel is the right fit for the body you should be alright.

guitars should be built holistically, where decisions about the body impact decisions about the neck and vice versa.
