You don't need traditional from the floor deadlifts to be strong and in shape. It you continue to barbell lift moderate-heavy, i would consider rotating any of the following to maintain your posterior chain: RDL, pendlays, trap bar, SLDL, good mornings, hip thrusts, swings.
Sumo technique is much more technical than conventional, but for most (not all), it will result in a more upright posture at the bottom and thus less stress on the low back.
Personally, I always found in easier to get stronger overall, and then let the deadlift essentially trail along, and it will go up naturally without over-straining.

its kinda a hassle to do all these weird little dumbell things. cant u just deadlift like 100 pounds for 10 instead of 200 for 5?

Nah, don’t quit deadlifts. There is nothing better in the gym than picking 6 plates off the ground for reps. But that’s the thing. Stay at 315 or so. Do 4 sets of 5 and call it good. Deadlifting makes every other lift easier.
The above is true for bench as well. You can get lots of shoulder issues “maxing out.”
Really all of your max lifts, should come from dumbbell work for reps...none of that 1 rep max shit. But that doesn’t mean you should give up the basics.
