But once you get outside the city, they're the Noodle Bar base with some variation but not a ton. Chang lets them do variations, but he's not going to let the Vegas or LA locations get too avant garde. If I had to guess, the problem in Vegas is that the space is gigantic and too big for them to be able to serve the noodle dishes consistently when it's all open; non-dinner hours, it's just the front part of the room and so they can do the noodle dishes more easily. I'm sure the average ticket cost is a major factor for no dinner ramen in LV too. They don't want a bunch of people with $20 tabs in that space. |

I don't know if it's a cost thing, that ramen isn't cheap. I think they charge like $16 out there, and they jack up the prices on the pork buns and the other apps. I've sat at the bar and ran up a $35-40 tab without drinks. And the space is big enough that it's not like they're losing money if they fill it up.
The worst is Beauty & Essex, which is a fucking nightmare. |

Just be careful that you only use the metal tongs they give you to actually move the raw meat. I constantly fuck that up and pick them up with chopsticks, and the servers are on you like hawks about it. |
