lol @ c/p-ing hundreds or thousands of notes
exporting will be a pain in the ass and you might lose formatting
and it won't be organized how you want it
just create notes in word and organize them on your hard drive how you want them organized

i used to use evernote and instant updating to the cloud is convenient but just use google drive to sync files on your hard drive across devices
i also prefer the traditional "page view" of ms word or pages or whatever. when writing on evernote it just feels like you're writing on an endless slate without any sense of where you are on the page. doesn't feel organized.
chances are that evernote would be bought out and all the data moved to a different interface before going under completely. but i didn't like the feeling of constructing a massive hierarchy for all of my notes on an interface that i couldn't really control / which probably won't exist in its current state in 5-10 years.

yeah my fear is pretty much what you point out but I do think that's not realistically going to happen (evernote going down) for a while
I suppose my backup would be Google Drive right now
for years before Evernote I used to do what you did on Word, so I can relate

Evernote is pretty cool because I can update it in real time on multiple devices
I have it going on my work laptop
personal laptop
work phone
so it's useful for my daily life, not just when I'm sitting by the one device with the list
