1) A lot of macro brew is made with rice or corn, which is generally cheaper than barley and wheat (especially corn). It would hurt profit margins to switch.
2) Most macro brew is lager, which is easier to mass produce on an industrial scale. Interestingly, lager is actually harder to make on a small scale because it requires better temperature control than most ales.
3) It’s not about “better”, it’s about consistency. A lot of really good beer lacks consistency, especially when there is bottle fermentation. Lots of variation based on age, storage conditions, etc. Can’t build a global brand without a consistent product.
4) Years of conditioning have lead a large portion of the market to accept pale lager as the default beer.
5) People associate microbrews with heavily hopped varieties, even though there are plenty of lighter craft beers.
