i grew up eating it a lot from my parents' deep sea fishing trips. i can't believe how expensive it is, usually around $25/lb. it's really good, but it's not chilean seabass good, and it's nearly as expensive. rock cod (vermillion snapper) is a good substitute and is only like $8/lb.
the mexicans do it best, pescado a la talla. covered in chili paste and grilled over charcoal.
