I'd visit southern/central Utah and hit all the NPs. Take I-15 to St. George north of Las Vegas. Start in Zion, head up to Bryce, then over to Capitol Reef. From there I would head up to Moab to hit Arches and Canyonlands. Don't forget some of the state parks too like kodachrome and dead horse point. It'll be hot and crowded af until September though.

Yeah, if you are going to Utah, the national parks/redrock country is far and away the best bet. There is nothing to do in SLC unless you ski. (Well, there are some cool/mountain hiking places I guess, but nothing that you couldn't already do in CA.) As an added bonus, they are also closer to LA. And you don't have to hit all of the national parks in one trip. You could easily spend a week or more just at Zion without getting bored.

The Central Coast on Highway 1 is also credited if you haven't done that before. You can hit Hearst Castle and Monterrey Bay Aquarium along with a couple of the state parks along the way. The Boardwalk in Santa Cruz is fun if you are in to that sort of thing. And you can always spend some time in SF at the end of the trip if you have some extra time.
