For Seinfeld, you could just say "because it's funny," and that would be true and a large part of it. To try to engage a little more with the question, three specific things about Seinfeld that were clever and that help the show remain a good watch:

They did a great job playing with the unexpected. What happened to the breached whale? Kramer's golf ball!

They did a great job pulling together separate story lines. The woman who wouldn't give Elaine toilet paper, the woman at the 900 number Kramer calls, and Jerry's gf are all the same woman. "Don't call me any more.... You either."

They had fantastic characters that amplified ridiculous traits we see in ourselves and our friends, family members, coworkers, etc. These characters went up to the line of being "too much" without going over. "You think you could keep us out of Florida? We're moving in lock, stock and barrel. We're gonna be in the pool. We're gonna be in the clubhouse. We're gonna be all over that shuffleboard court! And I dare you to keep me out!"
