Fish and chips from a good, family owned fish place are great. But most fish and chips you'll find are just ok and no better than what you'll get in the US.
A poster above gave a list of sites in London that are highly cr.
In addition to those sites in London, take a couple day trips outside of London if you have time. Oxford is less than an hour away. Canterbury is 90 minutes.

Go see some cricket at Lord's (one of the great traditional grounds) if you can find a game that isn't some important international game (they will be expensive and sold out) - e.g. if you're there on July 14, this game between an English club and a couple of touring Australian clubs is only 5 pounds for general entry

. You may not understand the game, but (1) you should, because it's a great game, and (2) even if you don't, the atmosphere will be awesome and completely authentic. Even Orwell wrote about the village cricket green being the heart of real England.
Also, go a couple of hours up the road to Oxford or Cambridge or both (separate days, they're in different directions).
