Is carbon steel, not non-stick. Makes the dish
A bit more subtle with the heat control.

My crutch has been to use a bit of oil
To raise the smoke point, but it works too well:
The omelette's just a little oily then.
Today I'm trying minimal canola
Just wiped around the pan, and then the butter.
