In a conventional LED panel, all pixels must be lit at all times. That means that when the image is dark, the pixel must emit some kind of light. This is why "black levels" were introduced as a marketing gimmick.
OLED displays can simply turn off those pixels. Since those pixels don't emit any light, they appear jet black. You can't achieve that level of contrast using pixels that are always lit.
This also saves energy, because the unlit pixels don't consume electricity. That means you'll get better battery life and the display components will generate less heat. Some of these OLED displays are razor thin simply because they don't have to dissipate much heat.
