Indians never grew sweet corn as a staple. They considered it an oddity that was only used on ceremonial occasions to make sweets. They ate hundreds of varieties of maize and only a few were sweet corn.

The problem is that by the time Europeans arrived here, they were already hooked on sugar from Asia. They kept asking these American Indians "what's good to eat around here" and Indians kept giving them all this maize, but it never worked. The Europeans never said "oh thank you, this is great" until some tribe noticed their sugar addiction and offered them some sweet corn. It was at that point that Europeans finally came to love maize, and now it's ILLEGAL to use other varieties of maize for anything but animal feed and home decor

people eat unprocessed sweet corn as a meal because it tastes good, unlike a mouth full of bland starch.

Its not a fucking 'staple' and we're able to have sweet corn all year round because of preservation technology (canning and freezing) instead it being very seasonal. Go munch on some flint corn, Poasts Too Much.

It's sugar from corn. That's all we ever wanted. We don't eat delicious foods like pozole here because they're not full of sugar.

Interesting fact: Indians didn't have sugar or even honey. They had something like honey but it more of a liquid you drank and it wasn't very sweet. Mayans used cocoa beans as currency but they ate and drank all their chocolate with no sugar

Here's the real dividing line between the USA and Mexico:

https://en.wikipedia.org/wiki/Nixtamalization

Mexicans do that shit to their corn. It's necessary in order to make it nutritious. However you can't find any nixtamalized corn products at Kroger or Safeway or even Whole Foods. Go ahead and try. 100% of the corn we eat is processed some other way.

That's why 100% of our tortillas taste like dogshit. We had to invent flour tortillas to compensate for the shittiness of our corn tortillas, which crumble and fall apart as soon as they touch moisture.

If it's nixtamalized it's gotta have lime listed in the ingredient label. Go ahead and find a pack of corn flour that includes lime on the ingredient label.

right but the only product Americans eat with sweet corn is "corn on the cob" sweet corn and canned sweet corn as an added ingredient

all of the products you are MAF about aren't sweet corn

All the corn in people's cereal and beer is sweet corn. So is the corn they use to make whiskey in the south

Mexico doesn't make any bad beer. Their shittiest brand is Indio and it's 5000x better than Coors. Their microbrews are all 180 too

Another angle here: how widespread was the use of sugar in Britain in the early 1600s? Do you suppose the ones who chartered off in search of a better life were swimming in tarts and figgy pudding back home

The Dutch and the Spanish probably had a lock on the sugar trade by then. Britain arrived on the scene later and they seemed more into textiles, tea and opium. Seems like the Europeans with any kind of chocolate culture are in central/northern Europe, and Russia I guess.

Wow, according to reddit you can't even get real lime in the store, that's why everyone on youtube is making their own:

Corn is so basic to bourbon, it’s a federal law: In order to be called bourbon, at least 51% of the grain used to make it must be corn. (Other grains such as barley, rye, and wheat all come in second.)

America has a thing for corn, going back to the first Thanksgiving in 1621, a meal the Pilgrims organized specifically to celebrate their first successful corn harvest. That’s how big a deal corn was.
