And I put some water in the cans of tomatoes after I added those. I have been watching my sauce consistency. I am going for a meaty sauce, but a sauce nonetheless. Will add more water if needed. First, I cooked down mushrooms in butter, EEVO, salt. Set aside. Then I did half a carrot, yellow onion , and two stalks of celery. Let these cook in the oil and butter without the mushrooms. Did a shallot next, then added about 5 cloves of garlic. Got that nice and fragrant and went in with a can of San Marzanos and half a can of paste. Added the mushrooms back in. Oregano, fresh basil, fresh rosemary, and some black pepper. Bam she’s got a nice tomato sauce for her penne that isn’t meat based. |
