I fried off some short ribs, sausage, and pork chops today, they are all now simmering in crushed tomatoes. Going to start testing my sauce with some crusty bread in about an hour.

beef is expensive as fuck now. chuck was basically free until a few years ago. 10-15 years ago ribeye was very affordable bc everyone wanted strip. 20 years ago hangar steak was cheap til the faggy "steak frittes" fad in the us.
