The propellers weren’t spinning during the final plunge, but the guy in question definitely hit one in the film, and then his body violently flipped around before slamming into the water. That’s based on survivor accounts and the general understanding of how bodies and debris fell as the stern rose out of the water.
As for the airflips, the fall and impact likely caused a dramatic rotation, but pinning it down to an exact number like “180” is pure speculation ;)
