Easy to make low oil breakfast potatoes with a cast iron skillet. Lightly oil the pan, toss and season taters over low heat, then bake in the oven.

The issue with home fries is that people cube the potato instead of slicing it. Slicing at a thin but varied thickness with small diced peppers and onions and some garlic (garlic powder is actually usually the best bet) and salt and pepper is the POTUS breakfast potato.
