The idea is that each time it's pasteurized/heated you lose some flavor. If you buy pasteurized milk and then cook with it, you're losing flavor twice.
If you're planning to cook with the mil anyway, you might as well buy raw. It's safe because you're heating it to kill the pathogens, and the results are more flavorful.
