precise temperature control that you get from copper can help prevent your sauce from breaking. eg if you were to try and make it in cast iron, the pot is going to keep pumping heat in to your sauce long after you remove it from your burner/bain marie. you now have scrambled eggs instead of a sauce.

not as big a deal when frying a steak or a carrot.

Enameled cast iron is as good or better at braising. I was a big cast iron user, now the only time I use it is on the grill. Carbon steel and an enameled ditc5h oven is all you need (and one non stick).
