leafy greens are full of bugs. cilantro is the worst culprit we've noticed. soak a bunch of cilantro in a bowl of water for a minute and you'll see.
there does need to be kosher certification / supervision for leafy greens because of the bug thing. but it is a total racket -- lots of evil jews are making a fortune off the whole process.

insects, bugs, etc simply arent kosher animals. the list of non-kosher animals extends far beyond just pigs and crustaceans.
its not like jain at all. its not about protecting bugs. we just cant eat bugs.

it's way more complicated than that. the torah provides a mix of 1) characteristics of kosher and non-kosher animals, and 2) non-exhaustive lists of certain kosher and kosher animals. further complicating matters is that the torah uses names for certain animals for which jewish authorities dont even know or agree what species they refer too.
it's definitely not a rule that every creature is banned unless specifically whitelisted.
there's an interesting debate about the turkey. jews had never encountered turkey until the new world was discovered. so nobody knew what to do with the turkey and whether it fell in one of the categories of allowed birds. some thought you couldnt eat it, but the vast, vast majority of opinions are now that turkey is kosher.

it's irrelevant what your corner indian restaurant is doing. you asked me, a gourmand, to rate your saag paneer. pan frying before adding it to the saag gives it a crunch and a depth of flavor, you also need some texture from the spinach to give it a more varied mouthfeel. it also looks completely flavorless, i don't see any of the spice tells i'd like to see in a dish like this.
your saag paneer, honestly, looks like it was made in a microwave and should be served to toddlers
it's a 2 out of 10 at best.
