any veg/vegan *may* be kosher, but you don't actually know what ingredients they're using. that's the whole point of kosher supervision/certification.

there are also other issues such as the prohibition against food being cooked by a goy... and checking the lettuce and herbs and spinach for bugs... etc

leafy greens are full of bugs. cilantro is the worst culprit we've noticed. soak a bunch of cilantro in a bowl of water for a minute and you'll see.

there does need to be kosher certification / supervision for leafy greens because of the bug thing. but it is a total racket -- lots of evil jews are making a fortune off the whole process.

it's way more complicated than that. the torah provides a mix of 1) characteristics of kosher and non-kosher animals, and 2) non-exhaustive lists of certain kosher and kosher animals. further complicating matters is that the torah uses names for certain animals for which jewish authorities dont even know or agree what species they refer too.

it's definitely not a rule that every creature is banned unless specifically whitelisted.

there's an interesting debate about the turkey. jews had never encountered turkey until the new world was discovered. so nobody knew what to do with the turkey and whether it fell in one of the categories of allowed birds. some thought you couldnt eat it, but the vast, vast majority of opinions are now that turkey is kosher.

our rice cooker is meat equipment for kosher purposes, so we cant make rice in it and eat it with a dairy meal. so we did it on the stove which isnt as good as our rice cooker.

I make basmati rice in a normal pot with a good lid using the very low heat absorption method. Works great. You just have to be disciplined about the amount of liquid you add and err on the side of being too stingy with the water not too generous. Edit and let it rest for a couple of minutes after removing from heat and before you take off the lid.

That said, I’ve tried to make biriyani a couple of times but I fucked it up and made it mushy every time.

look at the caramelization on the paneer. the spinach is also not bright green like yours, indicating it has been cooked down longer. and personal preference, but I think a pureed sauce like yours looks like baby food, a little texture is nice.

it's irrelevant what your corner indian restaurant is doing. you asked me, a gourmand, to rate your saag paneer. pan frying before adding it to the saag gives it a crunch and a depth of flavor, you also need some texture from the spinach to give it a more varied mouthfeel. it also looks completely flavorless, i don't see any of the spice tells i'd like to see in a dish like this.

your saag paneer, honestly, looks like it was made in a microwave and should be served to toddlers

it's a 2 out of 10 at best.

why isnt it relevant what corner turd restaurants in mfh -- or even turd restaurants in jackson heights are doing? what indian restaurant are you using for the ideal gourmand saag paneer? i'm not disputing that it's better to pan fry the paneer (it may very well be); i've just ate it probably in 50 different restaurants in mfh and never seen it that way. the standard seems to not fry it.

it was very flavorful. it had 12 different spices. i can poast the recipe from my wife.
