i assume he is not a great tipper considering stance. which means he is actually one of the biggest beneficiaries of tipping culture. if he's tipping below average then he's freeriding and would pay more if waiters were compensated the exact same amount from wages but tipping was eliminated.

On the extremely rare occasion that the service has been unforgivably bad and i've tipped under 20%, they will come up to you and ask if everything was OK and basically try to guilt you into increasing the tip because 20% is again what they think the floor is. You pretty much ONLY do see this is the blue cities where they are also have a high minimum wage and they are prob making a few bucks/hr more than min anyway.

I think part of it is the tipping aspect where you're supposed to choose how much someone's value is to you. For instance with pilots, you don't negotiate with them over the cost of flying you. Hotels are included. But with waiters you are in the driver's seat. Given the option, he simply doesn't think the juice is worth the squeeze. If it was all included he probably wouldn't complain like they do in Europe. But then again the service in Europe is horrendous and slow so there you go, it's a trade-off I guess.

Ultimately he really does look down on working people. If you covet his lifestyle, you should have to earn it, and it's not going to happen with some low-level prole job. After all, a waiter could never get into OSU or Fordham Law and work for a year in biglaw before retiring.

Tips do work in competitive markets to draw talent to the top places. In other words, the fact that tipping is usually 20% means in NYC at places like Le Bernardin where the average ticket is over $1,000 and a server can expect to be earning $500+ per shift. That means that you are attracting people to waitering who could be teachers, accountants, chefs, etc. These people are much more capable than what you get in flyover county where a waiter can expect like $150 per shift.
