Indians never grew sweet corn as a staple. They considered it an oddity that was only used on ceremonial occasions to make sweets. They ate hundreds of varieties of maize and only a few were sweet corn.

The problem is that by the time Europeans arrived here, they were already hooked on sugar from Asia. They kept asking these American Indians "what's good to eat around here" and Indians kept giving them all this maize, but it never worked. The Europeans never said "oh thank you, this is great" until some tribe noticed their sugar addiction and offered them some sweet corn. It was at that point that Europeans finally came to love maize, and now it's ILLEGAL to use other varieties of maize for anything but animal feed and home decor

The Dutch and the Spanish probably had a lock on the sugar trade by then. Britain arrived on the scene later and they seemed more into textiles, tea and opium. Seems like the Europeans with any kind of chocolate culture are in central/northern Europe, and Russia I guess.
