I differentiate between freezing and flash freezing. If done properly, flash freezing is fine. For example, you can't buy fresh alaskan king crab legs.... they're only available flash frozen because of the nature of the fishing operation. I probably couldn't tell if fish is flash frozen vs never frozen, but 100% can tell if it's frozen in a normal freezer.
