They made way too many people saints. Who is feasting on Saint Brice's day? How does all this work?

The feast of saint brice is probably celebrated by members of parishes named after him and people who took his name as their confirmation name

Roman empire had just as many:

https://en.wikipedia.org/wiki/Roman_festivals

If only Christians insisted that they get days off for the Saint days like Jews do for their various holidays.

there have been an estimated 10,000 saints so, yeah, there's more than one for each day. 1700 in the last 500 years when we have better documentation.

Most saints' days are just memorials, they aren't feasts at all. In the pre-V2 calendar, only days ranked as a double or higher could be considered feasts in any real sense, and that's a much smaller number.

So a village who had a more minor saint as a patron, or had his or her relics, would probably have celebrated that feast as a double, but no neighboring village might.

probably in a traditional community you'd have ~120 days ranked as a double or above a year, but some of those would fall during Lent or Advent and would not break penitential discipline (some exceptions there). so you'd still get quite a few feasts.
