Breadstick rules

pg 104 - Servers placed one breadstick per guest plus one

breadstick for the table. For example, if you had 4

guests, 5 breadsticks were served.

The same rule exists as 10 years ago, but restaurants

lack training and discipline to deliver. Now, servers

will bring an excess of breadsticks significantly

outnumbering the number of guests.

Darden management readily admits that after

sitting just 7 minutes, the breadsticks deteriorate

in quality.

Olive Garden uses 675 million – 700 million

breadsticks a year across all their restaurants (average

of 3 per customer). The average customer does not

consume 3 breadsticks, leading to massive

unnecessary waste.

darden. It's business suicide to turn people away because you're worried about staffing or running some employees into overtime. Understaffing is both short-sighted and false economy. If you are perpetually at your breaking point with servers and cooks (meaning you just barely have enough staff to handle the amount of orders) you will never grow your business. More importantly, standards will start to drop and people will get bad service or shit food.

pg 151 - On Friday and Saturday nights, the average Olive Garden experiences 60-90 minute wait times.(1)

We believe Olive Garden has false waits at these peak times due to execution errors, particularly slow table turns.

 A successful casual dining restaurant can clean a table and set it for the next guest within 1 minute of the previous guest

leaving, but Olive Garden takes 3-5 minutes to turn their tables on average.(2)

pg 163 - We believe the pasta is poorly handled and generally overcooked.

– Shockingly, Olive Garden no longer salts the water it uses to boil the pasta, merely to get a longer warranty

on its pots.

 This appalling decision shows just how little regard management has for delivering a quality experience to

guests.

– We believe this results in a mushy, unappealing product that is well below competitors’ quality despite similar cost.

scumbags? if you actually read the report, they are obviously highly concerned about quality. they think outsourcing soup would improve quality while reducing costs. they aren't simply trying to cut costs.

if you read the slide on soups, there's nothing in there about improving quality. cost cutting is the only motive for serving sysco.

To improve quality and consistency and reduce costs, it is appropriate to outsource some items to

a high quality producer who will be able to manufacture recipes and distribute the product (e.g. a perfect “Quality up, cost down” opportunity is with the

soups)

i don't see why you are focusing on the soups either. there is plenty of other stuff in there about improving quality that has nothing to do with outsourcing.

In practice, no.

Commercial leases for something like that are typically pretty long (10+ years) and they often have renewal options that are pegged on some roughly objective and non-discretionary measure.

heres the real answer these idiots dont understand

its "bad" because they don't pay rent, which means their profits per store are higher, and then they point to those high profits as if they're an example of their execution genius. they compare those profits to competitors who lease their stores, and use that to mask the fact that they actually have restaurants that significantly underperform the competition by a fucking longshot.

its basically like your friend who lives rent-free in his moms basement telling girls he's a better catch than you because he's able to afford a 5 series lease with all his free cash flow while you're stuck paying a mortgage/rent like a god damn loser

also its just not tax/economically efficient to own the real estate, because REITs have big tax advantages that makes, all else equal, a parcel of real estate held in a RIET simply worth more than a parcel of real estate held by anything else.

In my instance anyway, I like figuring out the best way to frame an argument, use precedents to my advantage, paint a convincing picture with words that convinces the judge to PWN the other side and that accomplishes something morally worthwhile and maybe even stands as a useful precedent for future cases.

If you're working on maximizing breadstick efficiency, the best case scenario is that middle class proles get fatter.

yeah I wondered this too? Was this "presentation" done in powerpoint or were these slides printed and given to everyone in a binder? If the former, it must have taken 13 hours.

Also, how did this get leaked?

So it's not actually intended to be informative? If they're going for the clumsy wall of text effect, they've succeeded.

It seems to me that what they've really done is done one thing poorly instead of doing two things well. Why not have a PowerPoint presentation that isn't shit and an accompanying clean report that you can actually read?

The Starboard guys are great and know what they are doing.

As for the people in this thread think that they are charging Darden a fee for any of this - you have the wrong idea, they own a significant amount of the shares in the company and only benefit when the share price goes up or earnings improve, which translates into a substantial dividend increase.

The actual huge deal for investors is that the company is going to do a REIT spinco for Darden's owned/leased real estate which will create substantial tax savings and increase investor yield.

The CEO who ran Darden before was an entrenched idiot who blew a ton of money and almost destroyed the franchise, glad he got ousted.

fairly large contradiction in the report in that they want to drastically reduce prep-related expenses while at the same time improving food quality. Good food requires a lot of prep. Buying in shit in plastic bags reduces prep but is expensive and not fresh.

huh? there need to be people in the back doing shit constantly, especially if they are retards. Point is that increasing food quality is really not possible if you simultaneously want to half the amount of prep necessary. Reducing menu size does help with all of the above.
