So in the Book of Job, God summoned Satan to come to Heaven to chat since they used to be Bros.
Satan arrived and they started talking about Job and how loyal he was to God.
My question:
Who was there to write down the conversation between God & Satan in Heaven and then turn it into what became a Book of the Bible?

You must be one of the dumb Jews, because:
1) Job is not the author of this Book; &
2) The Book of Job is one of the 16 books of the Bible written by an Unknown author.
So my question remains: Who the hell was able to listen to the entire conversation between God & Satan in Heaven and then somehow transcribe it?

you could ask the same thing about the Garden of Eden or any other non-attributed third person narrative and both jews and christians will respond that it was divinely inspired and didn't require the author's physical presence
it's a low IQ reddit atheist tier "gotcha". a better question would be how satan still had access to the heavenly courts if Job was written post-fall

In Job, the narrative bookends added to the poem at the beginning and end are the work of a weaker artistic vision and intellect than the poem itself. They are the most memorable part, unfortunately.
The meat of Job is the poem itself, and you might choose to start with Maimonides' interpretation (Guide to the Perplexed, ch. 22-23) to orient yourself. Job's materialistic understanding of God is challenged by suffering, and the human philosophical interpretations of God are taken up and dismissed in the form of the three comforters, until finally we reach the fourth comforter who tells us that God is beyond human understanding.
Did any of these people exist? No, of course not. It's a spiritual and philosophical poem. Their historicity is neither the point nor the lesson, nor is it claimed.
