All the meat and dairy comes through a weird supply chain operated by Jews who know that their customers will pay an inflated price for a mediocre product. You can in theory make a good kosher mozzarella or steak, but the market is tiny given that a lot of religious Jews are working on a tight food budget and there are only good kosher restaurants in a few places. Even fruit and veg has rules and so everything is processed and not very fresh. It’s an entire food subculture running as like a niche overpriced Sysco/Walmart where you’re forbidden to try anything else. It's not that different from other traditional eastern European food: potatoes, beef, chicken, buckwheat, carrots, and limited spices mashed together in a dozen different ways.
It just never seemed to evolve like other Euro cuisines did. |
