I've cooked a lot. Is the concern that it'll burn or something? I've used oil in the past but just bc I always thought that's what one should do.

You need oil if you're cooking on a stovetop dipshit.

If you are baking or roasting something you probably don't need oil or butter. But if you are sauteeing or (of course) frying you need some oil. I like my marinades to have some oil in them as well if I am grilling.

Many flavors are fat soluble. In fact eg of cooking a marbalized steak as the water in the meat evaporates under heat the fat/oil liquefies and replaces the displaced water while pulling in flavor.

It helps to cook food evenly. Oil heats up super easy and also coats everything it tiuches so it helps to cook in that way.

I see -- so it's about more even heating. I wonder if there's anything else that would more evenly heat something without the need to be ingesting unhealthy oil every time you eat something (other than an oven).
