I grabbed the smallest pack I could find with the best marbling. Set up the old Weber Kettle for indirect smoking and we have been going for about 5.5 hours now. We are wrapped in foil reading 174 internal. I plan to pull and rest around 195. I’ve got potatoes, carrots, and onions roasting in the oven for a side.
