Sometimes we would have chili, which was a recipe straight out of the Better Homes & Gardens big red cookbook.

But a lot of times it was just chicken. Chicken thighs. Chicken breasts. It was never deboned. As a result, as an adult, I rarely eat chicken and I never eat chicken with bones in it.

Sometimes she would make sausage with like green beans.

I’m sure we had spaghetti from time to time, but I don’t remember that.

She would make salmon and then serve it with a creamy sauce of boiled eggs.

I just remembered another dish she would make. It was called “tuna fish casserole.”

Just macaroni noodles, can of cream of mushroom soup, frozen peas, maybe a chopped up onion, can or two of tuna fish, and an ungodly amount of shredded cheddar cheese baked in the oven at 400 for an hour or so. Lol.
